Hi - I'm pretty new to special events like this - any guidance on what bands these stations will be operating on?

Well you can log in on Zoom (see above)...
or/and:
You can find the list with the callsigns that will be active over the weekend at:
https://www.ddars.net/registrations.html
If you put the callsigns into he "search" box of a cluster, f.e. at:
http://www.dxsummit.fi/#/
You will find the stations with frequencies and modes...

o encourage participants in the Mills on the Air weekend 2021 Denby Dale amateur radio club will be encouraging all the Mills stations who can to log in on Zoom 842 5221 3056 at their station on Saturday May 8th between 10.30am (0930utc) and 12.30pm (1130UTC) and on Saturday May 8th between 6pm (1700UTC) and 7.30pm (1830UTC). Zoom presentations of live activation of Special event callsigns especially encouraged but all club supporters are welcome to join during these times. This may include sharing of frequencies and callsigns of Mills special event stations so that they can make direct contacts.
Denby Dale club started the Mills on the Air event 25 years ago and although most of the special event stations are not able to be live from Mills there are some who have gained permissions to do so.
Denby Dale Club callsigns GB0MOA, GB1MOA etc will all be active at times over the whole weekend on air using most modes and bands.
Special event club callsigns will be running over the weekend of May8th/9th and for a few days both before and after the weekend.
